Being the middle of winter in the northern hemisphere things can get a little depressing with the lack of sun and super cold temperatures. So I like to take time to brighten things up with some fun baking. Be it easy no bake cookies, peppermint chocolate fudge, triple chocolate raspberry brownies, or chocolate shortbread cheesecake cookies. But if I want to really make the family happy I need to combine some favorites. The husband’s favorite baked treat is brownies. I adore caramel and the kids love mini marshmallows. Plus with it being cold we like something warm like hot chocolate. So why not combine them all into a delicious triple chocolate marshmallow caramel brownies recipe?
Easy Caramel Brownie Recipe
Gooey Triple Chocolate Marshmallow Caramel Brownies Recipe
Ingredients
- 1/4 cup TruMoo Chocolate Marshmallow Milk
- 1/2 Cup coconut oil
- 1 egg
- 1 box favorite Brownie mix
- 1/4-1/2 cup Salted Caramel topping
- 1/2 cup Chocolate chunks
- 2 cups mini marshmallows
Topping
- 1/4 cup melted chocolate chunks
- 2-4 Tablespoons Salted Caramel Topping
Instructions
- Combine Milk, oil, egg in bowl until smooth
- Add brownie mix and chocolate chunks until well mixed
- Place 2/3 brownie mix in prepared 9X9 brownie pan
- Bake for 12 minutes
- Add the remaining brownie batter
- Drizzle Salted Caramel Topping into brownie batter
- Swirl salted caramel through the brownie batter
- Bake 30 minutes at 325 degrees
- Remove and sprinkle the top with mini marshmallows
- Return to the oven and cook 5-10 minutes or until marshmallows are golden.
- Remove from oven
- Drizzle with melted chocolate chunks and salted caramel
- Allow to completely cool in pan
- Cut into squares and serve.
The fun of this marshmallow caramel brownies recipe is that we are using TruMoo Chocolate Marshmallow milk. We absolutely love TruMoo! It makes great spooky pudding cups trifle. And the kids just love TruMoo Chocolate Milk to drink all the time. It is a regular staple on our weekly shopping list.
What the kids love is the delicious chocolate taste. I love that it has NO artificial growth hormones* and NO high fructose corn syrup!

Now it is delicious as is, but have you tried it hot? It’s the easiest way to get a delicious cup of hot chocolate! Just pour yourself a mug and heat it up! Yum! Easy hot chocolate!

Now making brownies just as the box instructions say makes a good brownie. But if you change out the water and use TruMoo Chocolate Marshmallow milk it really takes it to the next level! The milk adds “umph” to the chocolate flavor, enhances the texture and leaves the brownies extra moist.
Then add in some of our favorite combinations with chocolate like salted caramel and mini marshmallows and you take a good brownie to epic brownies! If you like a little crunch you can also throw in some crushed pretzels. We tried it on half of the brownies, but the family preferred to snack on the pretzels on the side instead of inside the brownies.
To create Epic Caramel Brownies
Combine the TruMoo Chocolate Marshmallow Milk, oil and eggs into a bowl and mix until fluffy. Then add the brownie mix and chocolate chunks and stir until combined.
Place 2/3 of the brownie mixture in a square 9X9 brownie pan. Bake for 12 minutes.
Then add the remaining brownie batter and drizzle in the salted caramel topping. Use a toothpick or knife and swirl around into the brownie mix.
Bake for 20-25 minutes (depending on if you like gooey or more well done brownies.)
We like our brownies a little gooey so I take it out at about 30 minutes. Then top with the mini marshmallows.
Return to the oven and cook for another 5-10 minutes or until the marshmallows are golden.
While the brownies are cooking melt the chocolate chunks in the microwave safe bowl in 30 second intervals, stirring each time until the chocolate is all melted and smooth.
Remove from the oven and drizzle with the melted chocolate and more salted caramel.
Allow to cool completely in the pan. Slice into squares and serve with a hot cup of TruMoo Chocolate Marshmallow Milk.
These are a favorite family brownie treat. It is fun to bake with the kid’s help. And you are left with a decadent dessert for the family to enjoy on a cold winter day. We love to make these on no school days so the kids can be involved in the baking for a fun afternoon in the kitchen.
