Brown Sugar Spice Muffin

I’m a big fan of muffins. I don’t know why, I guess it’s because I feel like they’re a healthy cupcake I can eat for breakfast? ๐Ÿ™‚

Whatever the reason, I just love those personal portion pillows of buttery goodness. (Because I have to put butter inside a warm muffin!)

Brown sugar muffins are the perfect treat

The muffin I make the most is banana bread muffins, but I have to wait until I have bananas for that. And sometimes, I don’t want to wait. I want a delicious muffin now!

Enter the Brown Sugar Spice Muffin.

It’s incredibly easy and I always have the ingredients on hand.

Brown Sugar Spice Muffins

These sweet and spicy muffins are great for breakfast or a snack.

Ingredients

  • 1 cup brown sugar + 1/4 cup
  • 1/2 cup butter
  • 1 egg
  • 1 tsp vanilla
  • 1 cup milk
  • 2 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 tsp Cinnamon

Instructions

  1. Cream together butter and 1 cup brown sugar.
  2. Add egg and vanilla.
  3. Mix all dry ingredients together in separate bowl.
  4. Mix dry ingredients and milk alternately into creamed mixture.
  5. Put into muffin tins that are greased or have a paper liner.
  6. Sprinkle remaining brown sugar on top before placing in oven.
  7. Bake at 375 for 15 minutes.

They’re sweet and aromatic. It’s light and fluffy and reminiscent of farm cooking. I’ve never lived on a farm, but I suspect if I did, I’d be making these treats for my loved ones.

I made these for dinner one night not too long ago. Yes, dinner. We paired it with ham & cheese scrambled eggs and fruit salad. Mmm!

Anyway. I made these for dinner and they were completely devoured. I thought there’d be some left for breakfast the next day, but there wasn’t. And there are only 4 of us!

The sprinkle of brown sugar really gives it a sparkly crunch that is the frosting on the cake. Metaphorically speaking, of course.
