Delicious Blueberry Muffins Recipe, Made from scratch. One of my favorite breakfast foods are homemade muffins all made from scratch. While I love many different types of muffins, I much prefer homemade from scratch because they have a lot less sugar. Yet they still pack a great flavor every one will rejoice over! Recently I mixed up a batch of our blueberry muffins recipe and everyone was in love! With real plump blueberries and a super moist and fluffy center and slightly crisp muffin shell. It’s an actual breakfast food and not to be mistaken for the high sugar bakery confection that is more cake than muffin you find in most bakeries.

A delicious breakfast blueberry muffin recipe made from scratch.

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Ingredients

  • 2 eggs
  • 1 cup milk
  • ½ cup coconut oil
  • 3 cups all-purpose flour
  • 1 cup white sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1-2 cups Frozen blueberries

Instructions

  1. Preheat oven to 400 degrees
  2. Grease Muffin cups or use paper liners.
  3. Beat egg, stir in milk and oil.
  4. Sift flour and measure and add Sugar, baking powder and salt.
  5. Combine Dry ingredients with the egg mixture.
  6. Stir until the flour is moistened.
  7. Batter should be slightly lumpy.
  8. Don’t over mix.
  9. Gently Fold in still frozen blueberries.
  10. If you like a lot of berries in your muffins add a full 2 cups; if you like less, only add 1 cup.
  11. Fill muffin cups ⅔ full. Bake 20-25 minutes or until golden brown. Serve warm and enjoy!

It helps to keep them from getting squished as you gently fold the batter and then dish into the muffin tins. Delicious Blueberry Muffins Recipe, Made from scratch. Also when you mix in the blueberries being very gentle to fold them into the muffin batter is crucial. I always use a soft spatula instead of a whisk or such. Blueberries is a huge favorite in our family, but if you are lucky enough to have access to Huckleberries that would be our favorite pick. So definitely try it with frozen Huckleberries!     1. Oh I’m jealous! Our soil isn’t acidic enough to grow blueberries. I have trie many times, I just can’t get the soil right for them. But I’d love a good blueberry patch.

  5. I have never made muffins from scratch but this looks tasty! I especially like that you added the folding in the blueberries when they are frozen because I probably would have messed that up! This is going to be on the menu next week!

  9. Nothing is better than fresh out of the oven homemade! I made a apple crisp today by some apples my son gathered from a neighbors tree. We buy fresh when in season and freeze ourselves, it saves alot of money. I will have to try your recipe. I will probley use 2 cups blueberries though, lol

    1. As long as the pieces were cut small, I think it would turn out fantastic with strawberries and peaches! That is what i love about this muffin recipe. it is rather universal for the type of fruit you want to add in! It would also be amazing with apples and cinnamon chips. ooo….I need to try that. lol.
