You know that one movie you watched as a kid and still love? The one that stuck with you for years and years? And when you’re all grown up, you can’t wait to share it with your kids! For me, that movie was Chitty Chitty Bang Bang. Truly Scrumptious was just so beautiful with her poofy dresses and perfect blonde hair. (I’m now convinced it was a wig…)
One of my favorite scenes is the in the Scrumptious candy factory, where Truly and Professor Potts are trying to sell the Mr. Scrumptious on the idea of Toot Sweets. The opening line of the song is:
Don’t waste your pucker on some all day sucker.
And don’t try a toffee or cream.
Every time I hear that line, you know what I want? Toffee. And Cream. Both together would be wicked awesome.
This year my birthday and our 12 year anniversary were sort of glossed over. Why? Oh, I dunno. Something to do with a week long (grown ups only) trip to Hawaii. But I couldn’t just let the special days pass by with no recognition at all! And they’re only a week apart, so I decided to do something special and unique, yet affordable.
That looks pretty good, right?! I thought so too.
I went to Walmart and grabbed a box of The Curious Creamery’s Ice Cream Cake mix.
It’s in celebration aisle!
Then I steered over to the dairy section. You’ll need heavy whipping cream and milk. Instead of milk, I chose a flavored creamer – chocolate toffee!
But what this cake really needs is a delicious base. Like, oh, I don’t know…a giant cookie!
I debated making my own cookie, which I’ve done before. But I was not in the mood to deal with a messy kitchen (we were in the process of moving!), so I opted for buying a package of cookie dough in the fridge section. Much easier!
The list of ingredients you’ll need is in cake package, along with detailed instructions.
But just to simplify your life, here’s a list of what you’ll need:
1 package of The Curious Creamery’s Ice Cream Cake mix
2 1/4 cups cold heavy whipping cream
1 1/8 cups cold chocolate toffee creamer (or milk)
¾ cup sugar
1lb package of cookie dough
Toffee chips
½ recipe of this chocolate sauce
First, spread a thin layer of cookie dough in the bottom of a spring form pan.
Bake at 350 for 9-12 minutes.
Cool completely.
In a mixer (or in a tall bowl), add in heavy whipping cream and creamer. Then mix in the envelope packet (the box comes with 2, only add 1!) and sugar.
Mix on high for 3-5 minutes, until volume doubles in size.
Pour mixture over the cooled cookie base.
Freeze for 4 hours. Remove the spring form pan surround.
Top with the chocolate sauce and toffee bits.
Freeze for another 10 minutes to set the sauce and toffee chips.
Enjoy!!
I have always loved ice cream cakes. But they’re not exactly budget friendly. Just imagine all the money you’ll save by making your own! And you can go crazy with the mix-ins, making any combo of flavors you want.

All in all, this Truly Scrumptious Ice Cream Cake was a BIG hit. No surprise there. It was (wait for it…) Truly Scrumptious.
