I love to cook dinner and I have all the time in the world to make elaborate family meals – said no mom ever! OK so maybe there might be a few exceptions out there that truly love to cook meals and never run out of ideas. And maybe there are moms out there who can spend all day long prepping and cooking an elaborate family dinner. But I’m not one of them. Are you?
Our evenings are usually jam packed with helping 3 kids get homework completed, getting chores done, and juggling a newborn baby who decided her witching hour is when I’m supposed to be making dinner! And somehow I’m supposed to get a wholesome and hearty heartwarming meal on the table to please my family.
And then you add in the hectic Holiday schedule. Any other Moms out there ready to pull their hair out if we get asked one more time “What’s for dinner?”
Easy Family Dinner and Fruit Salad Recipe
Well, thankfully I have a super easy answer for you! For those nights when you just don’t have time to make up something from scratch. Or those nights when you are just sick of cooking. Or those nights when you need something easy so you can get back to spending time with your family, Marie Callender’s Chicken pot pie and our easy peasy fruit salad will save the day!
I’ve been really busy lately with getting our new site designed. Plus I knew the week before Thanksgiving was going to be a busy one. So when I did our last Grocery Shopping trip at Walmart, I stopped into the freezer isle and picked up a classic Marie Callender’s Chicken Pot Pie. I was so surprised to see that not only do they have the large family sized pot pie, but they also have a large variety of single serving pot pies too! I had to grab a couple of these because they will make awesome lunches this week too since the weather turned cold on me.
I also stopped in the Fresh Produce section to get supplies for our super easy fruit salad recipe. But I’ll get to that part in a minute.
The reason why I love the Marie Callender’s Chicken pot pie is because it tastes homemade with a light and flaky crust. And with a new baby just arrived I don’t have time to make from scratch so I rely on goodness like Marie Callender’s for wholesome family meals that doesn’t take time.
It’s super simple to bake up the pie. Just unwrap from the packaging.
To prevent burning the crust you can add an edging of tin foil around the crust. I happened to have a left over pie crust cover from last Thanksgiving. So I just adjusted it to the right size.
Then bake as directed. Now while it is baking I like to make a very easy fruit salad. I’ve taken this fruit salad to many pot luck dinners and everyone loves it. They are all amazed when I tell them just how easy it is to make. No one would have ever guessed!
Simply cut up your fruit so it is easy bite sized pieces.
Toss into a bowl
Add in the yogurt
And then gently fold until the fruit is all covered. See I told you it was super easy!
Just dish it up and serve!
But you can take it a step further and if you want to all of a sudden turn the fruit salad into dessert, just sprinkle a few mini dark chocolate chips on top! Ta-Da easy dessert! The kids love it. And it’s easy and a great wholesome dinner where everyone gets spoiled!
Then when the chicken pot pie is done serve it up with the fruit salad.
