"Even my KIDS ate it!"– Lasagna Recipe

I’m not a big fan of Lasagna and frankly neither are my kids. In the last 7 years of my oldest son’s life. NOT ONCE has any of my children eaten lasagna! They just simply refused! And yes; every time it is offered I make them at least taste it. That all changed on Halloween night; when a Family friend made up her homemade from scratch Lasagna! As usual I made my boys at least taste it before they could have any of their Halloween candy. Well I’m here to tell you MIRACLES happen! They both exclaimed that it was delicious and ate it all up! And even more surprising was that I liked it too!

This last weekend I asked my boys what they wanted Mommy to fix for dinner over the weekend and both of them said “Aunt MEL’S Lasagna!” I was blown away! So I got “Aunt” Mel’s recipe and she’s allowed me to share it with you! I hope you enjoy it as much as MY family has. They even ate it as LEFT OVERS the next day–Sheesh; even I ate the leftovers; which if you ask my husband that NEVER happens! haha. You can’t get any better than that!

Ingredients:

  • 2 cans of Diced Tomatoes (whole canned tomatoes work too)-If you bottle your own tomatoes then 1 quart jar.
  • 3 little cans of Tomato Sauce
  • 1 lb browned Hamburger
  • 1 can medium pitted black olives (do not drain)
  • 1 Tablespoon Italian Seasonings
  • 1 Tablespoon Garlic Pepper (this is harder to find; but is available in most grocery stores)
  • Lasagna noodles
  • shredded Cheese

Directions

Combine Tomatoes, Tomato sauce, Italian and Garlic Pepper seasonings and all liquid from the olives into a blender and blend well. Mix sauce in with the browned hamburger. In a 9×13 Pan (Glass usually works best) pour a little of the sauce/meat mixture into the pan and spread around. Then put a layer of the Lasagna noodles on top. Then layer more sauce. Next add a layer of Sliced Olives followed by a layer of Cheese. Then the Lasagna noodles again, sauce, olives and cheese; until you reach the top of the pan or run out of Sauce. Add Cheese to the top; cover with Aluminum foil. Bake at 350 F degrees for approx 45 minutes. Check that the noodles are tender and the cheese on top is melted. If the cheese isn’t melted, remove the Aluminum foil and bake uncovered for a few more minutes until the cheese melts. Serve and Enjoy! This is delicious with the typical Italian sides–toasted Garlic bread and Salad!

I'm impressed with any recipe that a whole family will eat, together at the same time!! I may have to try this one!! It looks very good,simple and a nice weekend meal too! Thanks!
