Mornings are hard! So much going on from dragging your over exhausted body from the warm comforts of a bed and trudging your way through getting kids up, dressed, fed, and out the door to catch the bus.
Even with prepping the night before, it is hard. So to make things easier, I like to have an easy breakfast that I can enjoy, that will give me the motivation to face my day.
For me, Breakfast has to be easy. We are not morning people. Well, at least not Mornings before 8 AM. But we have to be up long before then. So by the time we are ready to face breakfast, we don’t have a lot of time.
But breakfast is the most important meal of the day. And it’s crucial for a healthy lifestyle!
So what can you do?
I often like to take a little time on the weekends and prep school morning breakfasts for the week. This is sometimes our Healthy Chocolate, Peanut Butter, banana pancakes that I make in bulk and freeze for the week. Or Spice crumble Cinnamon Muffins, or even Apple Fritter Pancakes.
But recently my new favorite is our fruit-filled breakfast cereal bars using Great Grains® cereals.
My favorite Great Grains® cereal is the Blueberry Morning. But that is hard to find quite often. So I used my 2nd favorite the Great Grains® Cranberry Almond Crunch!
It is packed full of fiber that prepares your body for the day and keeps you full until lunch! Great Grains® uses Whole grains, protein, fiber, vitamin B, and antioxidants to get you the boost you need each morning!
Fruit Filled Breakfast Cereal Bars
Combine that with a low sugar fruit filling and baked into an easy to enjoy portable breakfast cereal bars and you are set for a simple morning, even when you are short on time and rushing out the door!
Just grab one and eat it on your way!
The best part is that these fruit-filled breakfast cereal bars are very easy to make! The most difficult part is waiting as the aroma fills your home while they bake!
Simply combine Flour, Great Grains® Cranberry Almond Crunch, brown sugar and baking soda in a bowl and mix.
Cut in butter until the mixture resembles a course crumble.
Set aside 1/2 cup of the mixture for a topping. Then press the remaining mixture into a baking pan. A 9X9X2 baking pan is preferred but you can probably get away with an 8-inch square cake pan8 inch cake pan if you don’t have a 9×9 pan.
Next, comes the fruit filling. There are many options you can apply here. But the best and easiest is simply using your favorite low sugar jam or jelly spread. We have many you can choose from:
- Strawberry Freezer Jam (our favorite)
- Raspberry Rhubarb Jam
- Strawberry Rhubarb Jam
- Honey Peach Jam (recipe coming soon)
- Peach Butter (recipe coming soon)
- Maple Peach Jam
- Blueberry Sauce
- Raspberry Fruit Filling – while not technically a jam it is an amazing fruit filling I use for all kinds of recipes that call for a fruit spread.
This time I used a pint of my Strawberry Rhubarb Jam I had in my storage room. But you can use any type of fruit spread, jam or jelly you happen to have around.
After you spread with your choice of Jam, sprinkle the remaining cereal mixture onto the top. You can pat down the topping to ensure it sticks together with the jam spread.
Bake at 350 degrees for 30-35 minutes or until the top is golden.
Remove from the oven and allow to cool in the pan on a wire rack.
After it is cooled, cut into bars. I cut mine down the center of the pan. And then cross-cut to create 10 breakfast cereal bars. You can even cut those in half again for 20 small to medium-sized breakfast cereal bars.
Store the bars in an air-tight container using parchment paper to prevent them sticking to each other.
And store in the fridge since they are filled with Jam. Then on your rushed mornings, simply reach in and grab one for the road!
Or sit and enjoy it with a delicious yogurt parfait, your favorite morning beverage and a great book for a lazy day in!
These Breakfast cereal bars also make amazing after school snacks for the kids too! They are full of flavor that everyone will enjoy.
And a great way to stave off the starving rug rats during that 1-2 hours between when they come home famished and dinner is ready!
