I’m quite particular about my chicken salad because let’s face it, too many recipes out there end up on the dry side. However, this version is a total game-changer with its generous amount of dressing and the clever inclusion of grapes, which add a burst of moisture and freshness that’s hard to beat.

🍗 Ingredients

Chicken: I prefer to use my home canned chicken because it is incredibly fast. But I also love to make this with freshly shredded chicken.

💡 QUICK TIP

Save time by using a stand mixer or an electric hand mixer to effortlessly shred your chicken! Not only will it cut your prep time significantly, but it’ll also spare your hands from the strain.

Celery: adding diced celery provides just the right touch of crispness and freshness.

Green Onions: these add a subtle onion flavor and a fresh, crisp texture, enhancing the overall taste and adding a hint of brightness to the dish.

Red Grapes: adding sliced red grapes to a chicken salad provides a burst of sweetness and juiciness, balancing out the savory flavors of the chicken and other ingredients. It also introduces a pleasant contrast in texture.

Mayonnaise: you will want to make sure you have real full-fat mayonnaise. Substituting with Miracle Whip does NOT taste right. Please don’t try it.

Sour Cream: this adds a creamy texture and a tangy flavor, enhancing the overall richness and depth of taste. It is also a crucial ingredient for binding all the others together into creamy chicken salad.

Seasonings: freshly ground Black pepper and sea salt are the perfect seasonings to complete the flavors.

Lemon Juice: the acidity of the lemon juice helps to tenderize the chicken and adds a refreshing touch.

✍🏻 Instructions

Prep Ingredients: begin by shredding the chicken, slicing the grapes, chopping the green onions, and measuring out the mayonnaise and sour cream.

Mix The Dressing: combine the mayonnaise, sour cream, pepper, salt, and lemon juice in a small mixing bowl. Whisk it all together until smooth

Combine Ingredients: In a large mixing bowl add the chicken, grapes, and green onions. Drizzle with the dressing. Stir with a spoon until the dressing is evenly distributed and all ingredients are well coated.

Serve and Enjoy! Now, enjoy a nutritious and delicious lunch! This chicken salad recipe is not only easy but also packed with flavor, quick to prepare, and incredibly satisfying, thanks to its high protein content!

🍽️ Serving Tips

We love serving the chicken salad on Hawaiian dinner rolls for mini chicken salad sliders. But when we serve it for a potluck or party we serve it with dinner rolls, bolillo rolls, or even croissants.

Aside from sandwiches, you can also serve it up on a single slice of toast, in a tortilla wrap, on a bed of lettuce, in a lettuce wrap for a low-carb option, or even eat it as it is with a fork! You can even snack on it with crackers or chips!

Enjoy!

👩🏻‍🍳 Chicken Salad Variations

  • Chicken: My method uses canned chicken because it goes faster. But you can also use leftover rotisserie chicken or regular shredded chicken. Both elevate this recipe.
  • Nuts: Try adding your favorite nuts to this classic chicken salad. Favorites include almonds, walnuts, pecans, and cashews.
  • Apples: Another great fruit to add to the mix is diced apples. It adds another flavor profile that blends well and adds another level of crunch to the texture.
  • Dried Fruit: You can also add dried cranberries to add a sweet and tangy flavor profile.

🫙 How long does chicken salad last?

When kept in the fridge, tightly sealed, your chicken salad should stay fresh for roughly 3-4 days. You don’t want to leave it out longer than 2 hours before you run the risk of bacteria growth.
