Miss Jade is one of my pickiest eaters. She rarely eats half of what the school provides for her school lunches. So instead we found if we send a home packaged lunch with her to school, she eats much better. 

Plus, being a part of helping to pack her lunch makes her more excited for eating it. 

But, after a few days of the same exact packed lunch, it gets kind of boring! But I still need something quick and easy for our busy school mornings.

I mean, can you imagine having the same basic ham and cheese sandwich between two slices of bread?

Every day. 

For Months on end? 

BORING!

Best Homemade Chicken Salad recipe for school lunch

To shake things up, we like to offer variety for Miss Jade to pack for her school lunches. 

The one thing we can always offer that perks her right up is a selection of King’s Hawaiian products. These are an easy way to make school lunches special while still being quick and easy!

She looks forward to the slightly sweet hint in the perfect single serving size for her small hands. 

Every time I go to the store, the kids ask for King’s Hawaiian Original Dinner Rolls. While those are their favorite, they also enjoy the King’s Hawaiian Mini Sub Rolls and King’s Hawaiian Sliced Bread. 

Our kids always feel it is a treat when I bring home a fresh pack of King’s Hawaiian Dinner rolls. And they are always excited to see what I’m going to create with them next! 

The unique flavor of King’s Hawaiian bread allows it to be used in a variety of recipes, ranging from sweet to savory. 

I love making mini hamburger sliders, and also sweet S’mores with King’s Hawaiian rolls.

But this time, to spice up Miss Jade’s school lunches, I whipped up a classic Homemade Chicken salad recipe. 

I love this chicken salad recipe because it is so easy to put together, and I can make it at the beginning of the week and it can last all week in the fridge. 

Plus I use our Homemade Canned chicken, so it makes it even easier.

Which makes creating her mini chicken salad sandwiches with the King’s Hawaiian dinner rolls really easy each morning!

Best Chicken Salad Recipe

This chicken salad recipe with grapes is a perfect meal prep option for easy school lunches and picnics. Flavorful tender chicken salad stuffed between sweet king's Hawaiian rolls for one delicious sandwich!

Ingredients

  • 1 Quart Homemade Canned Chicken or (4 Cups Shredded Chicken)
  • 4 stalks finely chopped celery
  • 2 green onions thinly sliced
  • 1 1/2 cup sliced red grapes
  • 1 cup real mayonnaise
  • 1/2 cup sour cream
  • 2 Tablespoons black pepper
  • 1 teaspoon pink Himalayan sea salt
  • 2 Tablespoons fresh lemon juice
  • 12 pack King's Hawaiian Original Dinner Rolls.

Instructions

  1. combine shredded chicken, celery, green onion, and grapes into a bowl and toss until well mixed.
  2. In a separate small bowl, combine mayonnaise, sour cream, pepper, salt, and lemon juice. Whisk until smooth.
  3. Pour mayonnaise mixture into the bowl with the chicken.
  4. Stir until well combines
  5. Cover and refrigerate at least 4-6 hours or even overnight.
  6. Slice each King's Hawaiian dinner rolls in half. Spread a few tablespoons of the chicken salad on the bottom and top with the other half.
  7. Serve and Enjoy!

Notes

This chicken salad recipe can be stored for about a week in an airtight container in the refrigerator.

Can easily be made a day ahead of time, for quick and easy lunch prep the next day.

This recipe is also easy to double or even triple to feed a large crowd for potlucks or family gatherings.

If you have family members who don't like celery - I found that if you chop them very finely, the kids don't even notice they are there.

I like to make the chicken salad recipe the day before. And then each morning that she wants to take a lunch to school, it makes it really easy to put together a balanced healthy lunch. 

We love to use a bento style box, because it helps us keep her portions the perfect size. This way we always gets ENOUGH, without it being way more than she needs for lunch. 

Miss Jade loves to have fresh fruit such as strawberries, blueberries or raspberries. Sometimes we even add a little yogurt in one of the small portion cups. 

Then we add her favorite veggies – sugar snap peas and baby carrots. And a string cheese. 

In the largest compartment, we fill with two King’s Hawaiian dinner rolls stuffed with the best chicken salad recipe in the middle. 

Pair it with a small bottle of water and she is set to have a feast that pleases her taste buds through the entire meal! 

Not to mention, we can put together this lunch box in about 10 minutes if not less! 

Honestly, the hardest part about this packed lunch is making sure the kids don’t eat all the King’s Hawaiian rolls in one day!
