With it being summer that means we tend to get and enjoy a lot more fresh fruit. We like to use the Good Cook’s Fresh keepers to help keep our fruit and vegetables fresher longer in the fridge until we can make something creative and fun with our produce. Just like our fresh fruit salsa recipe!
Keeping produce Fresh to make a Fresh Fruit salsa Recipe
We recently had an awesome sale on strawberries, blueberries, grapes and kiwi. Well that means it is time to get creative in the kitchen and cook up something delicious! But I always seem to be pulled to other tasks for a day or two before I can actually make something fun with the fresh produce we purchase.
So I was so thankful I had a Good Cook Cantaloupe keeper, Tomato keeper, citrus keeper and grapefruit keeper this last week! Oh they were a lifesaver! I simply washed my fruit and then placed them in the produce keepers and kept them in the fridge. They stayed fresh until I had time to come back and use them. They also keep the produce from getting squished in the drawers or getting shoved to the back of the fridge and forgotten about.
They also have a green pepper keeper, banana keeper and Asparagus keeper that are fantastic too.
I washed all my fresh fruit in a sink of cold water and a splash of vinegar. Let it soak for a few minutes to clean off all pesticides, dirt, or wax buildup. Then rinse and store until you are ready to use them.
I used the Cantaloupe keeper (of which I happen to have two because I love them so much) for storing grapes and strawberries. It is perfect to keep them from getting squished and going bad in the fridge. I stored the blueberries in the grapefruit keeper too.
Because of the nature of Strawberries, they still only last a few days in the keepers. Not a full week. But still better than when they are stored in the silly plastic bins they come in. Grapes have been stored longer than a week in the cantaloupe keeper and are still going strong. Normally my grapes are rotten in just a few days in the fridge in their plastic bag. So I am loving these keepers! We also took grapes in a cantaloupe keeper on our last trip and it helped to keep them fresh and not squished for the entire drive too!
Fresh Fruit salsa and Cinnamon Chips Recipes
After a few days I finally got time to get our fresh fruit salsa made. And man it was delicious! All three kids plus a husband gave it raving reviews! They enjoyed it as the dessert to their summer lunch this week. So lets get to the good stuff of the fresh fruit salsa! You will need:
- 4-5 large strawberries chopped
- 1/2- 1 full peach peeled, pitted and chopped
- Handful or two of chopped grapes. You want to pick ripe and sweet grapes. If you have sour grapes, no amount of sugar in the salsa is going to compensate for sour grapes.
- 1 kiwi peeled and chopped
- 1-2 handfuls of blueberries
- 1 small lime juiced
- 2 minced Peppermint leaves
- 1/4 teaspoon ground cinnamon
- 1/4 cup sugar.
- Sprinkle of toasted coconut for garnish.
To get started prepping all your fruit by peeling, chopping and juicing. Place all the fruit into a bowl, add the lime juice, sugar, cinnamon, and minced peppermint leaves.
Peppermint leaves are rather strong, so I only used two very small leaves. If your leaves are bigger than what is shown as the garnish in my pictures, you may want to cut down to only 1 or maybe half a leaf.
Set your fruit mixture aside in the fridge to marinate while you cook up the Cinnamon Chips.
For the Cinnamon chips you will need
- Soft medium flour tortillas
- 2-3 Tablespoons Coconut oil
- Cinnamon Sugar
Cut the flour tortilla into chip shapes while the coconut oil is heating on medium heat. Then lightly fry the tortillas in the coconut oil. Flip the tortilla chips over after the first few minutes and allow the second side to turn golden. Remove from pan and place on a paper towel. Sprinkle with cinnamon sugar. And you are done! Super easy! And they are so delicious!
Finally remove the Fruit salsa from the fridge and dish up the amount you want. Garnish with the toasted coconut and another mint leaf or two. Surround the salsa with the cinnamon chips and then enjoy!
To my surprise we actually had some left over fruit salsa. So I just put the leftovers into the grapefruit keeper and it is now keeping fresh until I cook up more cinnamon chips at tomorrow’s lunch. The kids can’t wait to have more.
Fresh Fruit Salsa Recipe + Sweet Cinnamon Chips #ProFreshKeepers
A delicious and sweet Fresh fruit salsa with Cinnamon Chips. Perfect Summer dessert.
Ingredients
Fruit Salsa
- 4-5 Large Strawberries Chopped
- 1/2- 1 full peach pealed, pitted and chopped
- Handful or two of chopped grapes.
- 1 Kiwi pealed and chopped
- 1-2 handfuls of Blueberries
- 1 small lime
- 2 minced Peppermint leaves
- 1/4 teaspoon ground cinnamon
- 1/4 cup sugar.
- Sprinkle of Toasted coconut for garnish
Cinnamon Chips
- Medium soft flour tortillas
- 2-3 tablespoons coconut oil
- Cinnamon Sugar
Instructions
Fruit salsa
- Chop up all fruit to chopped pieces
- Place in bowl
- Juice the lime and add to fruit pieces
- Add sugar and cinnamon
- Stir until well combined
- Allow to marinade in the fridge while you cook the cinnamon chips [bar]
Cinnamon Chips
- Cut tortillas into chip pieces
- Fry in coconut oil on medium heat in a fry pan.
- Remove from pan and place on a paper towel
- Sprinkle with cinnamon sugar[br]
Enjoy together
- Remove fruit salsa from the fridge and enjoy with your sweet cinnamon chips.
