With the temperatures rising, we are constantly looking for ways to stay cool on a hot day. Now being summer, that is the prime time to enjoy delicious frozen treats. Especially because they help to cool you off.
I grew up in love with FatBoy ice cream sandwiches. There was just something so magical about the delicious cake layers that stuck to my fingers as I ate them. And the creamy rich ice cream center. They are the original “old school cool”.
FatBoy ice cream sandwiches have been the perfect Nostalic dessert since 1925 that puts other sandwiches to shame with their thick, “ginormous” serving size. They are called FatBoy for a reason!
Their purpose isn’t aimed at being skinny. No, they are all about indulging in a special “You deserve it” treat. Their fat lineup of flavors includes S’mores, cookies and cream, mint chocolate chip and even a “boring” stereotype-busting original vanilla!
Can you see why skinny just isn’t their thing? Not only does FatBoy use real ice cream, but they also feature fun recipes for new ways to enjoy their sandwiches called FatterBoy. Have you tried a FatterBoy? There are all kinds of fun ways to “fatten” up your FatBoy sandwich.
I decided to make our own FatterBoy version by creating Banana Split Kabobs, because food is so much more fun to eat off of a stick!
The great thing about these FatBoy Banana Split Kabobs is that they are really easy to put together and they can be customized for each person! Just like a regular banana split!
The creation of the FatBoy Banana Split Kabobs
To make the FatBoy Banana Split Kabobs, you have to work quickly otherwise the ice cream will melt. So make sure you have all your ingredients ready to go before you even bring your FatBoy sandwiches out of the freezer.
First I always put a cookie sheet into the freezer to have it cooling to place the FatBoy Banana Split Kabobs on once they are assembled to help them from thawing too quickly.
Prep your favorite toppings into easy to grab bowls. You can have an endless array of options for toppings. Today we went with crushed nuts, shredded coconuts, sprinkles, and toffee bits.
You will also want to wash and hull your strawberries and peel and slice your bananas.
You will also need dipping chocolate, but you don’t need to melt that just yet. But have the chocolate wafers in a bowl ready to go anyway.
Pull out your favorite FatBoy sandwiches. The regular sizes work best for this, but you could probably do it with the new Jr. sizes as well if you wanted.
Open a single sandwich and then cut it into four even squares.
Using a bamboo kabob skewer, gently slide on a slice of fruit (you can pick either the banana or strawberry). Then gently slide on one of the squares of the FatBoy sandwich. Add another slice of fruit.
If you want to make a large FatBoy Banana Split Kabobs add another FatBoy sandwich.
If you want a small FatBoy Banana Split Kabobs only add on two fruit and the FatBoy sandwich in the center.
You can alternate between the strawberry and Bananas however you want. Or you can do all bananas if you prefer.
If you have a child that doesn’t like bananas, you can even omit them. But then you wouldn’t be able to call them FatBoy Banana Split Kabobs. haha.
Once you have the FatBoy Banana Split Kabobs assembled, place them on a sheet of parchment paper on the cooled cookie sheet.
Then return it to the freezer for another 20 minutes to 1 hour to ensure the ice cream stays frozen and hard. It tends to soften after being out during assembly and you want it frozen hard for the next step.
After the FatBoy Banana Split Kabobs are firm again, go ahead and melt your dipping chocolate.
You can either dip the entire FatBoy Banana Split Kabobs into the chocolate or you can take a spoon and drizzle the dipping chocolate across the entire Kabob or just the fruit. However, you want the chocolate on the kabob.
Then you can quickly sprinkle the FatBoy Banana Split Kabobs with the toppings of your choice before the chocolate hardens.
Return the FatBoy Banana Split Kabobs to the frozen cookie sheet to help the chocolate finish setting up.
For just a fun family activity, you can go ahead and start eating the FatBoy Banana Split Kabobs right away.
But if you are going to be using the FatBoy Banana Split Kabobs for a special occasion or party, you will want to return all the FatBoy Banana Split Kabobs to the freezer to harden once more.
Lastly, serve in a fun cold serving tray of ice or a fun Cake Pop stand, but be aware they will melt.

- 4 FatBoy sandwiches in favor of choice
- 2 bananas
- 16 hulled strawberries
- 16 Bamboo Kabob Skewers
- one 10 oz package Dark chocolate dipping wafers
- Toppings (optional)
- Shredded Coconut
- Chopped Almonds
- Toffee Bits
- Sprinkles
Instructions
- Place cookie sheet into the freezer to cool
- Prep your favorite toppings into easy to grab bowls.
- wash and hull strawberries and peel and slice bananas.
- Slice a single FatBoy sandwich into four even squares.
- Using a bamboo kabob skewer, gently slide on a slice of fruit (you can pick either the banana or strawberry).
- Gently slide on one square of the FatBoy sandwich.
- Add another slice of fruit.
- Once the kabob is as large as you want, Place it on a sheet of parchment paper on the cooled cookie sheet.
- Place cookie sheet into the freezer for another 20 minutes to 1 hour to ensure the ice cream stays frozen and hard.
- melt your dipping chocolate.
- Drizzle dipping chocolate onto Kabobs
- Sprinkle on the toppings of your choice.
- Replace onto the frozen cookie sheet while chocolate hardens
- Enjoy right away or return to freezer to finish hardening.
Make up a bunch and hand them out as the perfect Summer BBQ dessert or for a birthday treat! They are also excellent on a hot afternoon or just as a “you deserve it” treat.
