Recently, my migraines have increased in frequency and severity. So in hopes of better- managing my migraines, I started trying out the Ketogenic, or Keto, diet. But the hardest part has been simply trying to think of NEW ideas for family dinner that are also Keto friendly.
I start thinking about making the perfect meal to please everyone and then get frozen in indecision, and nothing gets done. It’s the curse of a perfectionist.
But through the last couple weeks trying new Keto foods, I’m realizing that a delicious Keto friendly dinner can actually be really quick and easy!
How quick and easy?
Let’s just say it’s easy enough to make even when suffering from a migraine. Because that totally happened.
But let’s be honest: all Moms want a simple and quick family dinner, right? Life is too busy for anything that requires all-day cooking. Save those meals for the holidays. For everyday family dinner, we need something fast and easy.
While going through Walmart trying to think of easy family dinner ideas that are also Keto friendly, I walked past the deli counter. I saw the Eckrich deli meat line in the case, and an idea started to form.
Since Eckrich deli meats are always gluten-free, they are easy to use in the Keto diet. And they are full of flavor and made with unmatched quality, so I feel like we are eating gourmet with very little effort.
I always love to pick up quality deli meat when I’m looking for easy meals. So why not take a favorite easy bruschetta recipe and turn it into a Keto-friendly version? It was actually easier than I thought.
So that is how this Keto Bruschetta recipe came to life – through sheer necessity. I needed something quick and easy for family dinner that still tastes like we’re eating gourmet. Solution: Eckrich deli meats.
Keto Friendly Easy Bruschetta Recipe for families
So, how many of you are going “Wait! Bruschetta uses bread! How is that keto friendly”?
And you would be right.
Except I made some modifications to the traditional bruschetta recipe to make it Keto friendly.
The Best-Ever Keto Bruschetta Recipe
- 5-6 slices Eckrich Virginia brand Ham
- 5 oz Diced fresh mozzarella
- 4 disks Keto Cloud Bread (optional)
- 1 clove minced garlic
- 1/4 cup diced onion
- 6-8 large basil leaves chopped
- 1/2 teaspoon sea salt
Balsamic Glaze (optional)
- 1/2 Cup Balsamic Vinegar
- 3 Tablespoons Swerve/Monk Fruit 0 calorie sweetener
- Remove seeds from tomatoes
- Dice the tomatoes, onion, basil leaves, and mozzarella cheese
- Combine tomatoes, onion, minced garlic, basil leaves and sea salt into bowl and toss until well mixed
- Mix in mozzarella cheese.
- Sprinkle chopped Eckrich Virginia brand Ham onto the center of a cloud bread
- Add a spoonful or two of the tomato mixture on top of the ham
- Drizzle with balsamic glaze and enjoy
- Bake in oven at 350 degrees for 10-15 minutes or until the cheese is melted.
- Remove from Oven and drizzle with balsamic glaze and eat immediately.
- Combine balsamic vinaigrette and 0 calorie sweetener into a sauce pan
- cook on medium heat until it begins to bubble
- reduce the heat to medium-low and continue to cook until it reduces by half (about 10 minutes)
- remove from heat and allow to cool.
- This can be made hot, or cold. With or without the balsamic glaze.
- The balsamic glaze can be stored in the fridge for about a week.
I love that this recipe uses simple ingredients that are easy to find at your local Walmart. Simple, but not ordinary. In fact, once combined, they taste like something you’d find in a gourmet restaurant.
If you don’t want to mess with the Keto Cloud Bread, you can easily make this into a Keto bruschetta salad instead. Simply combine the vegetables, mozzarella, and Eckrich deli meat.
Then drizzle with the Balsamic Glaze or vinaigrette. Enjoy with a fork or spoon.
But if you want this to be a more traditional bruschetta recipe, make it into an open-faced sandwich with the Keto cloud bread.
Sprinkle a slice or two of diced Eckrich Virginia Baked Ham into the center of the cloud bread.
Gently spread on a spoonful or two of the Tomato and Basil Caprese Salad.
If you want a tasty dish for a hot night, you can stop there and enjoy a cold keto bruschetta sandwich.
Or take it a step further and drizzle with the balsamic glaze or use balsamic vinaigrette.
For colder nights, put the filled Keto cloud bread onto a cookie sheet and bake at 350 degrees for 10-15 minutes, just until the cheese is melted.
You can enjoy it as is, or drizzle the Balsamic vinaigrette on top. Then enjoy!
There are all kinds of Eckrich deli meats that you can utilize in this recipe, and they would all taste amazing. However, my kids all prefer ham. So that is the Eckrich deli meat I picked.
The great thing about Eckrich deli meat is that it tastes like gourmet ham, but without the time and effort that into cooking it myself! Our favorites are the Eckrich Virginia Baked Ham and Eckrich Black Forest Ham. Both are fabulous in this Keto-friendly, easy bruschetta recipe.
I love that this easy bruschetta recipe is versatile. Our kids aren’t eating Keto. Just my husband and me. So, I grabbed some French bread and let the kids have their Eckrich Virginia Baked Ham bruschetta on French bread.
For the husband and me, I replaced the French bread with a Keto Cloud Bread, and it was amazing.
It’s the mix of the ham, fresh mozzarella, and tomatoes that really make this dish shine.
If you want to go even more simple, you can skip a “bread” altogether and just make a Keto-Friendly Easy Bruschetta Salad. Simply mix everything together into a salad bowl and enjoy with a spoon.
This Keto-friendly easy bruschetta recipe can be enjoyed cold for a warm summer day, or hot for a cold autumn night. It’s all based on your preferences. As I said, this easy bruschetta recipe is very versatile.
The last bit of this Keto Bruschetta dinner is the Balsamic Glaze. And again, this is also versatile. You can skip it all together, use regular Balsamic vinegar, or make the balsamic glaze.
As you can see this easy Keto Bruschetta recipe is an excellent choice for a busy school night. It takes about 10 minutes of chopping ingredients and then 10 minutes to bake if you want it baked. Then – dinner is served.
It was a lifesaver the other day when my oldest stayed after school to take a test. I had to run to pick him up at the time I am normally making dinner. And then after we got home, the husband and I had to hurry to get ready for a class we are taking together. So, it was very easy to throw this together to feed everyone before we left.
I have a few kids that don’t like tomatoes. So for them, they enjoyed the Eckrich Virginia Baked Ham with mozzarella on French bread. It made them all happy and it allowed me to spend more time outside of the kitchen doing things to take care of my family.
The other great thing about the Eckrich deli meats being available at my local Walmart is that it is easy to stock up for the entire week in one shopping trip. I grabbed a few different Eckrich deli meat flavors because it is quick, easy, and versatile for use in so many different recipes.
Now the kids can easily make afterschool snacks with their favorite Ham. And I have easy lunches for Miss Rose who absolutely loves deli meat and cheese cubes with cinnamon apple slices or a banana for lunch.
When my kids want to just snack on some ham, they love the Eckrich Black Forest Ham. It is dry cured and smoked, it has the intense, traditional Black Forest ham taste. And they love it for snacks.
