Deluxe Cheeseburger Salad Recipe, All The Taste But Without Threatening Your Waistline!

I love Cheeseburgers, but when you are trying to be healthy, they just don’t fit into the meal plan; or can they? By making a few alterations to this favorite Pampered Chef Deluxe Cheeseburger Salad recipe, I can still enjoy the immense delightful flavor of a cheeseburger but in a much healthier fashion! Plus, It’s simple enough that even the kids will love it and it’s really easy to make!

Not to mention that family who is eating for diabetics usually do well with this salad! No need for sugary dressings either. Just a delicious bed of lettuce salad, tomatoes and delicious deluxe cheeseburger topping! It makes for the most amazing dinner! And no need to side dishes either! I love it because it is so easy to make as well!

Deluxe Cheeseburger Salad Recipe

Ingredients:

  • 1/4 Small or white red onion; diced
  • 1 sliced tomato
  • 1 lb 93-96% lean ground beef
  • 1/2 cup sliced/diced dill pickles
  • 3/4 cup ketchup
  • 1 tbsp yellow mustard
  • 1 head or package romaine lettuce
  • 1/2 cup shredded cheddar cheese

 

Brown the hamburger. While hamburger is browning, dice up the onions and pickles. My boys don’t like onions and one of them doesn’t like Pickles, so I chop them very finely to “hide” them in the hamburger mix, so I still get the flavor, but they don’t know they are eating them!

When hamburger is brown add the onion, pickles, ketchup and mustard and mix. Then scatter the cheese on top and turn off the heat. The cheese will melt naturally. Our favorite is using our home canned dill pickles. They have the best flavor. But if you don’t have any; regular store bought dill pickles works ok as well.

 

Make a bed of lettuce and tomato slices and scatter the hamburger mix on top, and enjoy! A delicious Deluxe Cheeseburger with all the fixing but minus the high calorie bun!

This salad is a huge favorite in our family, and this way I can still enjoy the flavor of a cheeseburger without the high calories, high grease and I don’t even miss the bun!

Taste Tester #1 loved it, and said, “I really like it like this! I don’t need a bun! This is good.”

Taste Tester #2 chowed down and didn’t even notice the hidden onions and pickles and said, “It is good! Can we have it again Tomorrow?”

Taste Tester #3- Jade; well, she wasn’t in much mood to eat anything tonight. She’s in her Chicken, string cheese and oatmeal only phase, so she won’t touch much of anything at present.

The Husband even liked it and the best sign of approval; he said he’d eat it again if I made it again!

Now if only I can get taste Tester #1 and 2 to actually add the lettuce and tomato!
