If you know anything about me by now, it should be that I LOVE easy recipes. Especially recipes that are fancy! 😉 And, if you remember from the Cinco Sensations story, my mom is Latina. We have grown up with simplified Mexican dishes, which I love.
Recently I got to visit my family, which I only get to do a few times a year. While I was there, my dad asked if I was hungry for something delicious. I’d driven almost 11 hours the day before, with my two kids, on my own. I was exhausted and heartily sick of fast food. Of course I was in the mood for something delicious.
My dad chopped up an avocado and topped it with a helping of my mom’s homemade ceviche. It was the first time I’d had it. It was love at first bite.
Quick and Easy Ceviche
What is Ceviche (seh-VEE-chay)? It’s a Latin dish mainly using raw fish and seafood marinated in citrus juice. The citrus juice cures the raw seafood, making it edible.
Now, I love sushi as much as the next gal, but raw seafood and fish? Um, no thanks. For this recipe we used cooked shrimp and imitation crab.
This is my mom’s recipe for Ceviche.
Easy Ceviche
Ingredients
- 1 1/2 cups imitation crab
- 2 cups cooked, tailed shrimp
- ½ cup salsa
- ¼ cup lime juice
- ¼ cup chopped cilantro
- 1 avocado
- Salt to taste
Instructions
- Chop all ingredients except avocado.
- For best flavor, let the ceviche rest for one hour in the fridge for flavors to ripen.
- If you’re in a pinch, serve right away.
- Slice the avocado and ladle ceviche on top.
- Or chop the avocado, mix it in and serve over a warmed corn tortilla.
- Or serve with tortilla chips or crackers
You can buy both the shrimp and the imitation crab in the frozen seafood section. If you’d rather use a can of salad shrimp, that will work just as great. Make sure you use your favorite salsa in this recipe, as it adds most of the robust flavor.
This is the ultimate hearty snack or light meal. It’s a cool dinner for warm summer nights. It’s a delicious dip for a party. It’s an appetizer. It’s so versatile! And the best part of this recipe is eating it!

Yummmmmm! that looks sooo good. I like to do shredded chicken (canned sometimes to be quick and easy) and pile it in an avocado half with some salt and pepper. Lots of protein and healthy fats. Takes 2 minutes to put together and its delicious!
