If you are one of our regular readers, you know I’ve been down and out with a lung inflammation. But I still have to feed my family. And just because I need easy, doesn’t mean my family has to suffer. So I thought I’d show how you can still throw together an insanely easy Saint Patrick’s Day themed family dinner with minimal time and effort.
The star of these Saint Patrick’s Day dinner ideas is Cooked Perfect® Fire Grilled Chicken. While the Irish Traditionally eat lamb, it is rather difficult to find and still takes a lot of effort to cook.

Instead, I went with something really easy for the main dish of the dinner, that still packs great flavor.

I first started by mixing up an easy Irish Soda Bread. I love this bread because it is so stinking easy to make! Only 5 minutes to mix up the dough and then it simply bakes. No need to prove the dough!

While the Irish Soda bread is baking, you can add some leprechaun magic to your family dinner table with a pot of gold at the end of a fruit rainbow.

My kids love fresh fruit. Plus, it doesn’t get any easier than putting out some fresh fruit for a great side dish on Saint Patrick’s Day.
To make it really fun, lay out a spread of colorful fruits such as strawberries, mandarin oranges, grapes, and blueberries in the shape of a rainbow on a serving platter.


Add a small pile of mini marshmallows at one end of the rainbow for a fluffy cloud.
And finish it off with a cauldron full of gold wrapped chocolate caramel candies at the other end of the fruit rainbow.

If you have time and energy you can also add a side dish of traditional Irish Mashers. Our family absolutely loves Mashers (mashed potatoes). But sadly this year, with my health limitations, I couldn’t pull it off.
When the Irish Soda Bread only has about 15-18 minutes left to bake, it’s time to warm the Cooked Perfect Fire Grilled Chicken.
