When it comes to family dinner, easy is always my favorite. Especially for weeknights. Usually our evenings are full of activity from the kids doing chores, then homework, them make dinner, often running around dropping boys off to scouts, or I have meetings, or the husband has meetings. Something is always going on. And rarely do we have a lot of time to make dinner. So anything that can be made quickly and is packed full of flavor wins in our house, and our easy Sesame Chicken Stir-fry is definitely a great choice!
Easy Sesame Chicken Stir-fry
Now normally we would mix up a chicken stir-fry and serve it on top of steamed jasmine rice. Oh it is so good! But since I am trying to cut down on simple carbs for a while as I work with my Doctor to balancing my insulin, this time I decided to try something different. I’m going to be making a Faux Rice with Cauliflower as my base and then the Sesame Chicken on top.
Now the other great thing about doing it this way, is that I’m sneaking in a lot of vegetables that kids normally wouldn’t eat. But they don’t even know it’s packed with vegetables!
And even better this recipe is super simple thanks to McCormick Skillets sauces! I love these sauces. When you are in a pinch to get a great tasting meal on the table, you simply grab one, some protein and veggies and you have a meal ready in 15 minutes or less! First you will start with a base of our Cauliflower Rice Recipe. It’s really easy to make and tastes amazing. It is the perfect base for an easy Sesame Chicken Stir-fry when you want to be a little healthier.
While the Cauliflower rice is cooking, put 1 lb cubed chicken into a skillet to saute with 1 Tablespoon butter.
When the chicken is almost cooked through, toss in a package of your favorite Stir-fry vegetables. I hand picked out my vegetables individually because I couldn’t find a package I liked. So I grabbed some snow peas, sugar snap peas, broccoli, and carrots. Cook for 3 minutes or until vegetables are a tender-crisp and chicken is cooked through.
Stir in the McCormick Skillets Sesame Chicken sauce. Bring it to a boil. Then reduce the heat and simmer until it is thoroughly cooked.
Lastly spread the Sesame Chicken stir-fry over the Cauliflower rice and enjoy!
Then finish it off with sprinkling on some unsweetened Coconut and Roasted Sesame Seeds.
You just made a delicious and hearty Sesame Chicken Stir-fry in 15 minutes or less!

Easy Sesame Chicken Stir-fry Recipe low carb option
A delicious way to enjoy sesame chicken stir-fry in a healthier option with very little time.
Ingredients
Cauliflower Rice
- Cauliflower
- Shredded Carrots
- 1 bundle green onions
- pure Olive oil or coconut oil
- McCormick’s California style Garlic pepper
Sesame Chicken Stir-fry
- 1 pound boneless skinless chicken breast
- 1 Tablespoon butter
- 1 package stir-fry vegetables
- 1 package McCormick Skillets Sesame Chicken Stir-fry flavor
Instructions
- Cook up the Cauliflower Rice as instructed in the Cauliflower rice recipe.
- Cut up Chicken into strips or cubes
- Saute Chicken in butter until almost cooked through
- Add in stir-fry vegetables
- Cook 3 minutes
- Add in McCormick Skillets sauce and bring to boil
- Cook 1 minute
- Serve on top of Cauliflower rice
The other great thing is if you are following Weight Watchers program like I am, this is also a very low Points plus meal! Each skillet packet is only 1 point plus per serving (with 5 servings per packet). So figure out how much chicken you eat in your portion and add 1 points plus for the Sesame chicken skillet sauce and you have your points plus for the entire meal, since all the vegetables in the meal are 0 point foods!
Which means if you have 3 oz of the chicken with the skillet sauce you are looking at about a 4 points plus meal! And you will be stuffed with all those vegetables! Talk about an awesome dinner!
