Fish Tacos Recipe with Chipotle Sauce and Salsa Corn

Every now and then we need a way to spice up our menu plan. We usually don’t eat a lot of fish. No particular reason really, just not a big dish that gets asked for a lot. But every now and then I get a craving for some amazing fish tacos with a Chipotle sauce! Most places in our area only serve fish tacos seasonally. Plus they are expensive. So in order to calm my craving and give the husband a special treat, I took the plunge and decided to make our own fish tacos! And boy did they turn out great!

Shopping for Fish Tacos

So I usually don’t keep a large supply of frozen fish in stock. We don’t eat it often. Usually just on occasion. We like it, but not every week. Usually once a month. So I had to go pick up some fresh frozen fish. I love the convenience of the frozen fish fillets because of how easy they are to bake up,  yet they taste delicious!

I often shop at Walmart because it makes it so simple. I can get almost all my groceries and other shopping errands done in one stop. When I have a toddler with me, the less trips in and out of the van the best.

I was able to find a great supply of the Van de Kamp’s Frozen fish products. And the Birds Eye vegetables in the frozen section too.

 

 

I was able to find some great deals on a bunch of different grocery items for the fish tacos. It was pretty nice to get my shopping trip done so quickly in one stop. You can see all the great deals I found at Walmart from my Google+ shopping album.

But now, let’s start cooking up our fish tacos!

Ingredients for Fish Tacos

For the fish taco itself you will need

  • Tortillas
  • Shredded cheese
  • Shredded Lettuce or cabbage
  • Chipotle Sauce
  • Corn Salsa from Birds Eye Steamfresh Corn
  • Van de Kamp’s Fish Fillets
  • Fresh cut wedge limes

 

For the Corn Salsa you simple need a bag of Birds Eye Steamfresh corn and a can of your favorite Rotel!

For the Chipotle sauce you will need

  • 1/2 cup mayonnaise
  • 1/2 cup plain Greek yogurt
  • 1/2 tsp. dried oregano
  • ¼ tsp. ground cumin
  • 1 tsp lime juice
  • 1 tsp salt
  • 1/2 tsp chili powder

Directions for Fish Tacos

I began by creating the Chipotle sauce. Simply combine all the ingredients into a bowl and mix until smooth. Then put aside in the fridge while you prepare the rest of the food.

Bake the Fish Fillets according to the directions on the Van de Kamp’s package. If you don’t have Van de Kamp in your area Mrs. Paul’s fish Tenders would great as well. Aliens have recently taken over my children and they refuse to eat anything creative or cultural. So for them, I had to add on some Van de Kamp’s crunchy fish sticks and some french fries. Thankfully I can bake them all together at the same temperature for the same time.

 

While the food is baking, then prepare the Corn Salsa. I love how simple Birds Eye makes having fresh steamed vegetables. We frequently buy Birds Eye steamfresh vegetables! My husband loves all the flavors and I’m a big fan of the corn and sweet peas. Simply steam up the corn according to the directions. Then mix well with a can of your favorite flavor of Rotel. I used a mild flavor this time, but next time I’m thinking of using a more spicy can.

There are lots of different ways to make Corn Salsa. But this way was the easiest for a busy mom. But Birds Eye has some great recipes for Salsa corn and other mixtures of their vegetables. I recommend checking them out! They are some brilliant ways to spice up the vegetables on your table!

Then take a few minutes and slice a few limes. If you are only cooking for two; one lime is sufficient. Really you need about one or two wedges per person.

Finally with all the ingredients ready; it’s time to put them together into a fun Fish taco! With a soft tortilla, add shredded lettuce. You can also use cabbage but I’m not a fan of cabbage. So I always use lettuce. But when I worked in the food industry; they always used shredded cabbage with the fish taco dishes. Then add the baked fish fillets, shredded cheese, Corn Salsa and then drizzle with the Chipotle sauce. For extra zest, squeeze a wedge or two of fresh limes on top. Wrap and enjoy!

 

I truly enjoyed my Fish Taco. It really hit the spot of my food cravings lately. My husband enjoyed them so much he had seconds! And what about the kids? Well much to my surprise they absolutely loved their Van de Kamp’s fish sticks with tartar sauce. They have even asked, “Mom, can we have this again tomorrow?” Why Yes! Yes they can!

I never thought I would like fish tacos but I do. I like just simple lettuce and tarter with the fish. The children love the veggies and always smile when I say taco's
