Eating healthy can sometimes be a challenge. Doesn’t it seem like some healthy meals just take longer to prepare? And when you are a busy mom and short on time; having a fast lunch on hand makes all the difference. That is why I love the Fresh Express salad mixes. They cut out the prep work when it comes to putting together the best Chicken Caesar Salad for lunch. When I’m looking for a balance meal; that will give me energy, taste good and fill me up; this is usually my go to lunch. Because it is so easy to throw together. And I feel like I’m feasting an fancy lunch. And while it is really easy to put together; it doesn’t taste like a quick lunch.
Express Chicken Caesar Salad
Have you ever tried the Fresh Express Salad Mixes? They are one of my favorites. They are usually the more frugal brand in our area, costing around $2-4/bag. So that is a big bonus for them. Fresh Express salads are thoroughly washed, rinsed, and gently dried, then sealed in patented “Keep-Crisp®” breathable bags to keep their just-picked freshness, without preservatives.
But also because I love the large variety of salad mixes they offer. They have a variety of just lettuce mixes such as butter lettuce, roman hearts, American blend, 50/50 mix, spring mix, baby spinach and lots more. They also have a special USDA-Certified Organic line.
Plus they have complete salad kits that include the dressing, toppings and all. They have a variety of Caesar salad kits, a Salsa kit, and our favorite the pear Gorgonzola; which includes a mix of different dark colored lettuces, sweet dried pears, frosted almonds and a pear gorgonzola vinaigrett. Oh it is amazing. Even my boys love this one and they eat it all the time.
But I usually save the Salad mixes for family dinners; so everyone can enjoy them together. When it is just me for lunch; I throw together this fun chicken Caesar Salad!
Express Chicken Caesar Salad Recipe
- Fresh Express Hearts of Romaine Lettuce
- Fresh Express Baby Spinach
- 2-3 oz Tyson Grilled & Ready Southwestern Chicken Breast Strips
- Handful of Shredded Carrots
- Shredded Mozzarella Cheese
- Sunflower Seeds
- 2 Tablespoons Kens Steak House Creamy Caesar salad Dressing
- Heat Tyson chicken in a skillet. No oil; just heat until warm.
- Fill your plate with handfuls of Romaine and baby spinach.
- Throw in Shredded carrots, as many as you desire.
- Sprinkle lightly with Shredded Mozzarella cheese.
- Toss with a small handful of Sunflower seeds
- Spread the chicken on top.
- Top with a drizzle of the Ken's Caesar Salad dressing.
Now if you happen to have ripe tomatoes on hand; it would make this salad perfect! But sadly our Tomatoes weren’t looking so hot in the store this week; so I had to pass those up.
This Express salad usually takes about 7-10 minutes to fix. And that is because I use the slow method of warming the chicken in skillet on the stove. You could warm it in the microwave; but I personally love the fresh crispness of warming in a skillet.
I also never measure. I should. But I don’t. I just stuff my plate full of as much veggies as possible. I don’t think you can go wrong with too many veggies in this one. And then I add just a little shredded Mozzarella. But not a lot. You don’t want the salad overwhelmed with the cheese. It is there just for an accent of flavor.
Now it surprised me to find that when I got out of my little community of my parents home. That not many people use Sunflower seeds on salads. say what? I was surprised. It is my favorite topping! So obviously I had to add those on top. Much healthier option than bacon pieces. Though bacon would totally taste amazing in this too! If I had some on hand; I probably wouldn’t turn my nose up at it. Lol.
All in all; this is my safety lunch. I have a last minute Italian baked chicken dinner recipe that saves me when I get in a pinch. You know, when I’m running late and need a quick and easy family dinner and forgot to defrost anything. Cause it’s made from Frozen chicken and only 5 ingredients. Totally a life saver for dinners. And now this Chicken Caesar salad is my life saver lunch option!
